Ingredients

  • 1 kg apples (e.g., Boskop)
  • 4 tbsp Lemon juice
  • 290 g sugar
  • 1 pinch cinnamon
  • 400 g flour
  • 1 tsp Baking powder
  • 120 g peeled, ground almonds
  • 1 pinch salt
  • 250 g cold butter
  • 2 tbsp powdered sugar (for dusting)

Instructions

    Peel, quarter, core and chop the apples. Steam with lemon juice, 120 g sugar and cinnamon for 3-5 minutes over low to medium heat until just tender.

    Preheat oven to 175°C (350°F) fan or conventional. Line a springform pan with parchment paper.

    For the crumb topping mix flour, baking powder, remaining 170 g sugar, almonds and salt in a bowl. Cut in cold butter until mixture resembles coarse crumbs. Press half of the crumbs into the bottom of the pan. Spread the stewed apples over them. Sprinkle the rest of the crumbs on top. Bake for 50-55 minutes until golden brown. Dust with powdered sugar before serving.
