Apple Cake

Ingredients
- 3 sour apples (e.g., Boskop)
- 2 tbsp lemon juice
- 200 g butter
- 120 g dark brown sugar
- 1 tsp ground cinnamon
- 3 eggs
- 3 tbsp apple sauce
- 1 pinch salt
- 325 g spelt flour type 1050
- 0.5 packet Baking powder
- 100 g Ground Almonds
- 120 ml milk (3.5% fat)
- 75 g chopped almonds
- 1 tsp lemon zest

Peel, quarter, core and dice the apples; mix immediately with lemon juice.

Cream 125 g butter with 80 g dark brown sugar and cinnamon. Gradually fold in eggs with a pinch of salt, then stir in apple sauce. Mix 250 g flour with baking powder and ground almonds, alternating with milk into the butter mixture. Fold in the apple pieces.

Transfer dough to a greased, lightly floured pan; smooth the surface. Bake at 180 °C (fan: 160 °C) for about 50 minutes.

For the crumble, combine remaining flour with chopped almonds, the rest of the dark brown sugar, lemon zest and butter; knead into crumbs between your palms. Sprinkle over the cake halfway through baking and bake until golden.

Remove the finished apple cake from the oven, let it cool, release from the pan and set on a cooling rack. Slice and serve.
