Apple Cake with Vanilla Sauce

- 300 g flour
- 1 pinch salt
- 100 g sugar
- 1 egg
- 200 g butter
- 1 kg tart apples (e.g., Granny Smith)
- 2 tbsp lemon juice
- 50 g sugar
- 0.5 tsp ground cinnamon

- 1 egg yolk
- 0.5 l milk
- 1 vanilla bean (pulp)
- 2 egg yolks
- 3 tbsp sugar
- 1 tsp Cornstarch

For the dough, mix flour with salt and sugar, sift onto a work surface, make a well in the center and add the egg. Distribute butter pieces around the well, chop all ingredients into crumbs with a knife and quickly knead by hand into a smooth dough. Shape into a ball, wrap in cling film and refrigerate for 30 minutes.

Preheat the oven to 180°C (350°F) with upper and lower heat.

For the filling, peel, quarter, core and slice the apples thinly. Mix with lemon juice, sugar and cinnamon.

Divide the dough in half; roll one portion slightly larger than a pie tin. Line a buttered tin with it, forming a rim. Spread the apple mixture on top, roll out the second dough portion and place over the filling. Press edges together, cut small leaf shapes from leftover dough, brush the surface with egg yolk, lay the leaves on and brush again. Bake in the preheated oven for about 50 minutes until golden brown.

Meanwhile, bring milk and vanilla pulp to a boil in a saucepan for the vanilla sauce.

Whisk egg yolks with sugar and cornstarch in a bowl; pour hot vanilla milk in a thin stream while stirring into the mixture. Return the thickened mass to the pan, heat briefly on the stove without boiling. Strain through a sieve and let cool.

Remove the finished pie from the oven, cut into pieces and drizzle with vanilla sauce before serving.
