Ingredients

  • 225 g flour (Type 1050)
  • 1 pinch salt
  • 3 tsp baking powder
  • 50 g butter
  • 125 g grated cheese
  • 2 tsp mild mustard
  • 1 bunch chives or parsley (to taste), finely chopped
  • 150 ml milk

Instructions

    Sift flour, salt and baking powder into a bowl. Add the butter in small pieces and knead into a crumbly dough. Stir in grated cheese, mustard and chopped herbs. Then gradually whisk in enough milk to form a smooth dough.

    Roll the dough on a lightly floured work surface to about 2.5 cm thickness and cut into a circle. Slice the round dough into 8 wedges (like cake slices).

    Preheat the oven to 210°C. Place the triangles on a baking sheet lined with parchment paper and bake for about 20 minutes on the middle rack until golden brown. Let the scones cool.
