Apple Brownies
Apple brownies with vanilla from Spoonsparrow are a real treat with their juiciness!
Ingredients
- 2 Eggs
- Pinch of salt
- 60 g Coconut blossom sugar
- 1 Vanilla bean
- 175 g Applesauce (unsweetened)
- 100 g Durum wheat flour Type 1050
- 0.5 tsp Baking powder
- 20 g Cocoa powder (1 heaped tbsp)
- 1 tsp Powdered sugar from birch sugar (optional)
Instructions

Separate the eggs. Place egg whites in a tall bowl, yolks in a bowl. Add a pinch of salt to the egg whites and beat with the whisk of a hand mixer until stiff peaks form, gradually adding the coconut blossom sugar.

Halve the vanilla bean lengthwise with a small, sharp knife and scrape out the seeds.

Mix the vanilla seeds and applesauce with a wooden spoon into the egg yolks.

Mix flour, baking powder, and cocoa powder in a bowl and sift into the egg yolk mixture. Stir briefly, then fold in the whipped egg whites.

Line the bottom of a square baking pan (20x20 cm) with parchment paper. Pour in the batter and smooth with a rubber spatula.

Bake in a preheated oven at 175 °C (Fan: 150 °C, Gas mark 2) for about 20 minutes. Insert a wooden skewer into the center of the batter: if it comes out clean, the batter is done; otherwise, bake for a few more minutes.

Remove the pan from the oven and let the brownies cool for 5 minutes. Then, remove the batter from the pan and let it cool completely on a wire rack.

Cut into 9 equal squares with a large knife. Dust the brownies with powdered sugar through a sieve, if desired.
