Apple-Braised Pancakes
The Apple-Braised Pancakes from Spoonsparrow are just as good for breakfast as they are for dessert and taste great for both young and old.
Ingredients
- 250 ml milk (3.5% fat)
- 200 g Spelt flour Type 1050
- 4 eggs
- 1 pinch salt
- 2 Apples
- 4 tsp rapeseed oil
- 8 tsp honey
- 0.5 tsp Ceylon cinnamon
Instructions

For the batter, whisk milk with flour until smooth. Mix in eggs and a pinch of salt, then let rest for about 10 minutes.

While the batter rests, wash the apples, quarter them, core, and cut into thin strips.

Heat 1 tsp oil in a pan for each pancake. Sauté ¼ of the apple slices for 3–4 minutes over medium heat until softened. Drizzle with 1 tsp honey and let caramelize for 2 minutes.

Pour ¼ of the batter over the apples, allow to set for 1–2 minutes, then lightly brown. Carefully flip the pancake and finish cooking until golden brown. Repeat to make a total of 4 pancakes. Place the pancakes on a plate, drizzle with remaining honey, and sprinkle with cinnamon.
