Ingredients

  • 500 g pineapple (canned)
  • 2 tbsp Lime juice
  • 200 g sweetened coconut cream (canned)
  • 200 g mascarpone

Instructions

    Drain the fruit flesh, set aside about 80 g and finely chop it; blend the rest with the coconut cream and lime juice. Place the mascarpone in a bowl and fold in the pineapple mixture and chopped pieces. Transfer to a freezer and freeze for about 4 hours, stirring well at the start and occasionally thereafter (or use an ice‑cream maker for about 25–30 minutes).
