American-Style Lime Cake

Ingredients

  • 220 g whole‑grain butter cookies
  • 100 g cold liquid butter
  • 6 limes
  • 4 very fresh eggs
  • 250 ml sweetened condensed milk
  • 8 gelatin sheets
  • 120 g powdered sugar
  • 200 g whipping cream
  • sugar (optional)
  • Mint leaves (for garnish)

    Crush the cookies and mix with the butter. Press the mixture into the bottom and sides of a 24 cm springform lined with parchment paper, firming it in the refrigerator. Meanwhile wash limes hot and dry them; grate the zest of three limes thinly. Juice all limes and measure out 200 ml of juice. Separate the eggs. Beat the yolks with condensed milk until fluffy. Stir in lime juice and zest. Heat the mixture over medium heat while stirring until just before it boils, then remove from heat and let cool slightly. Soak gelatin in cold water, then dissolve it in the still warm cream. Let the cream cool to lukewarm. Whisk egg whites with powdered sugar until stiff peaks form, fold into the cream. Spread the mixture over the cookie base and chill until set. Beat whipping cream until stiff, sweeten lightly if desired. Spread the whipped cream over the cake and garnish with mint leaves and lime slices as preferred.
