American-Style Corn Soup

Ingredients
- 2 onions
- 1 Garlic clove
- 300 g potatoes (starchy)
- 2 Tomatoes
- 2 tbsp butter
- 2 tbsp corn flour
- 100 ml White wine
- 500 ml vegetable broth
- 300 g mussel meat (pre-cooked and ready to use)
- Salt
- freshly ground pepper
- 300 ml milk
- 400 g canned corn
- 2 tbsp chopped parsley

Peel and finely dice onions and garlic.

Peel and dice potatoes.

Wash, quarter, seed, and dice tomatoes.

Melt butter in a pot. Add onions, garlic, and potatoes. Sauté briefly, dust with flour, stir, then deglaze with white wine. Add vegetable broth, bring to a boil, and simmer for about 20 minutes. Then add milk and corn, simmer gently for a few more minutes. Finally fold in mussels, parsley, and tomatoes. Let it rest for several minutes. Season with salt and pepper and serve.
