Ingredients

  • 400 g beetroot
  • 600 ml Vegetable Broth
  • 2 tbsp Apple cider vinegar
  • Salt
  • Pepper (freshly ground)
  • 300 ml kefir
  • 0.5 cucumber
  • 200 g radishes
  • dill (for garnish)

Instructions

    Peel and dice the beetroot, setting aside the leaves. Simmer the beetroot in hot vegetable broth with the vinegar for about 30 minutes over low heat; then blend finely and season with salt and pepper. Allow to cool well before refrigerating completely.

    Stir in the kefir and adjust acidity slightly. Wash, trim, and quarter the cucumber lengthwise, slicing into thin rounds or shaving. Wash, trim, and thinly slice the radishes. Mix both into the soup, taste again, and serve garnished with dill.
