Amaranth-oat muesli with nuts and nectarine slices: energy, vitamins, minerals & fiber plus a burst of flavor delivered by this high‑kick muesli.

Ingredients

  • 5 tbsp chunky oat flakes
  • 1 tbsp ground flaxseed
  • 200 ml orange juice
  • 20 g hazelnuts
  • 20 g almonds
  • 150 g low‑fat quark
  • 3 small nectarines (or peaches or apricots)
  • 3 tbsp puffed amaranth

Instructions

    Mix oat flakes, flaxseed and orange juice in a bowl and soak for about 45 minutes.

    Chop the hazelnuts and almonds.

  3. 3.

    Combine the nuts and quark with the soaked oat mixture.

  4. 4.

    Wash, dry, halve the fruit and remove pits. Slice into wedges.

  5. 5.

    Serve by spooning the muesli into bowls and sprinkling puffed amaranth on top.

    Arrange the fruit slices over the muesli.
