Ingredients
- 150 g butter
- 150 g sugar
- 5 eggs (separated)
- 75 g ground almonds
- 100 g ground walnuts
- 50 g chopped almonds
- 3 tbsp rum (or orange juice)
- 50 g breadcrumbs
- 1 tbsp cocoa powder
- 100 g grated chocolate
- 1 pinch salt
- butter (for the pan)
Instructions

Preheat oven to 200°C with top and bottom heat. In a tall bowl combine butter, sugar, and yolks; beat with an electric hand mixer until very fluffy. Add nuts, rum, breadcrumbs, cocoa, and grated chocolate. Mix further, then whip egg whites with a pinch of salt until very stiff and fold into the batter.

Grease a round ovenproof pan, pour in the batter, and smooth the top. Place a deep baking tray in the center of the oven, set the pan on it, and pour enough boiling water so that the pan sits about halfway in the bain-marie. Bake for about 45 minutes. After baking, let the pan rest for another 10 minutes.
