Almond Cake with Berries

- 150 g Cranberrys
- 6 Eier
- 200 g Zucker
- 1 Msp. Salz
- 1 unbehandelte Zitrone (Abrieb und Saft)
- 300 g gemahlene Mandelkerne
- 100 g Mehl
- 50 g Mohnsamen
- Puderzucker (zum Bestauben)

Preheat the oven to 180°C fan.

Brush the baking pan with oil and dust it with flour.

Peel, clean, and grate the carrots. Wash, dry, and pat the cranberries. Separate the eggs. In a bowl whisk the yolks with one‑third of the sugar, salt, lemon zest, and juice until frothy. Beat the whites into stiff peaks, gradually adding the remaining sugar until firm meringue forms. Mix the almonds with flour, poppy seeds, and carrot grates. Fold in one‑third of the meringue with the yolks and mix well. Gently fold in the rest of the meringue. Fold in the berries and pour the batter into the springform pan, smoothing the top. Bake for about 50 minutes (test with a toothpick). If the cake darkens, cover it with foil. Let it cool in the pan.
