Ingredients
- 4 egg whites
- 1 pinch salt
- 1 tsp lemon juice
- 170 g powdered sugar
- 250 g ground almond kernels
- 60 small wafer cookies
- 30 whole shelled almonds (halved)

Preheat the oven to 140°C with top and bottom heat.

Beat the egg whites with salt and lemon juice until very stiff. Gradually add powdered sugar while whisking, continuing until the mixture glows and forms peaks. Fold in the almonds. Place the wafer cookies on a parchment-lined baking sheet and spoon small mounds of almond mixture onto each. Top each mound with a halved almond and bake in the preheated oven for 20-25 minutes. Remove and serve cooled.
