Almond Cake

Ingredients
- 300 g flour
- 30 g yeast
- 60 g sugar
- 100 ml milk
- 1 egg
- 80 g Butter
- 1 tsp grated lemon zest
- 1 pinch salt
- flour (for the work surface)
- 300 g sugar
- 400 ml whipping cream
- 50 g topping cherries
- 5 eggs
- 1 kg quark
- 500 g mascarpone
- 2 packets Vanilla Pudding Powder
- 250 g sugar

Sift flour into a bowl. Create a well in the center and crumble yeast into it. Stir in 1 tbsp sugar and 3 tbsp lukewarm milk, cover and let rise for about 30 minutes. Then add remaining ingredients and knead into a smooth dough. Let rise again for another 30 minutes.

For the almond mixture simmer sugar and cream over low heat for about 10 minutes with occasional stirring. Remove from heat and fold in chopped cherries.

Whisk all ingredients together until smooth to make the quark mixture.

Roll out dough on floured surface and place on a baking sheet lined with parchment, forming a rim. Spread quark mixture over dough, then spread almond mixture on top. Bake in preheated oven at 180°C fan for about 60 minutes.
