Ingredients
- 100 g butter
- 170 g flour
- 70 g sugar
- 1 egg yolk
- 70 g ground almond kernels
- 2 drops bitter almond aroma
- 1 pinch salt
Instructions

Knead a smooth dough from the fat, flour, sugar, egg yolk, almonds, bitter almond aroma and salt, wrap in foil and chill for about 1 hour.

Preheat the oven to 175°C. Roll the dough into finger‑thick logs and cut into 4 cm pieces. Press each piece lightly into small round flower‑shaped molds (or other shapes) of about 4 cm diameter. Place the molds on a sheet and bake on the middle rack for about 10 minutes until golden yellow.

Immediately tap the biscuits out of the molds (tap the rim gently on a hard surface so they release), cool on a wire rack. Serve with fruit compote to taste and whipped cream.
