Allgäuer Cheese Noodles

Ingredients
- 400 g flour
- 4 eggs
- 1 pinch freshly ground nutmeg
- 100 ml milk
- Salt
- 200 g Emmental cheese
- 2 tbsp melted butter
- 2 onions
- 2 tbsp clarified butter
- 2 tbsp chives sprigs
Instructions

Combine flour, eggs, nutmeg, milk and a little salt in a bowl to form a smooth dough; add 100-150 ml water until the dough is thick and sticky when dropped from a spoon.

Let the noodle dough rest for 30 minutes.

Bring plenty of salted water to a boil in a large pot.

Grate the cheese finely while the water boils.

If needed, add more water to the dough, then use a spaetzle cutter to portion the dough into the boiling water and let it cook for a few minutes. The noodles are done when they rise to the surface.

Preheat the oven to 100 °C fan‑forced.

Remove the noodles with a slotted spoon, rinse them under cold water, drain, and toss in melted butter.

Layer the noodles alternately with grated cheese in a pan, cover, and place in the hot oven until the cheese melts.

Slice onions into thin rings and roast them golden brown in hot clarified butter.

Sprinkle the cheesy noodles with the onion rings and garnish with chives sprigs before serving.
