Apple Risotto with Radicchio

- 1 small radicchio
- 2 shallots
- 60 g Butter
- 250 g risotto rice (e.g., Arborio or Carnaroli)
- 150 ml dry white wine
- 800 ml hot chicken broth
- Salt

Peel, halve, core, and cut the apples into small pieces. Remove the outer leaves of the radicchio, quarter it, and slice into fine strips. Peel the shallots and dice finely. In a pot melt 40 g butter and sauté the shallots until translucent; add the rice and stir, then deglaze with some wine, pour in the remaining wine, and cook while stirring until almost fully reduced. Then add some chicken broth, the apple pieces, and continue simmering while stirring until the rice absorbs the broth. Add more broth and keep cooking under constant stirring until the broth is reabsorbed. Repeat this process until the rice is cooked (about 20 minutes).

Season the risotto with salt and pepper, fold in the radicchio, 4 tbsp parmesan, and the remaining butter. Divide among four plates and serve sprinkled with grated parmesan.
