Ingredients
- 320 g flour
- 150 g sugar
- 1 pinch salt
- 3 tbsp cocoa powder
- 250 g butter
- 1 egg
- 500 g Low-fat quark
- 250 g mascarpone
- 4 eggs
- 2 tbsp vanilla sugar
- 150 g sugar
- 3 tbsp cornstarch

In a bowl combine the flour with the sugar, salt, cocoa, cubed butter and the egg. Knead into a smooth dough using the paddle attachments of an electric mixer. Shape into a ball, wrap in cling film and chill for about 30 minutes.

After chilling knead the dough again briefly, set aside one‑third of it. Roll out the remaining two‑thirds to fit the size of a springform pan lined with parchment paper, shaping a rim. Preheat the oven to 180 °C (350 °F) fan‑heated.

Whisk the quark and mascarpone until smooth. Separate the eggs; beat the yolks with vanilla sugar, sugar and cornstarch, then fold into the quark mixture. Whip the egg whites stiffly and fold in gently. Pour the filling over the prepared base and level it.

Break up the remaining dough roughly and spread it over the cheese layer. Bake in the preheated oven for 50–60 minutes. Let cool in the pan, release from the ring and serve.
