- 5 Zucchini
- 2 Garlic cloves
- 250 ml white wine vinegar
- 2 tsp salt
- 200 g sugar
- 1 tbsp pink peppercorns
- 2 tbsp mint

Wash, trim, quarter lengthwise, and cut zucchini into ~3 cm pieces. Peel garlic and slice thinly.

Bring vinegar with 300 ml water, salt, and sugar to a boil in a pot; add zucchini and simmer for 1 minute.
