Zucchini Rolls with Cream Cheese Filling

- 3 zucchini
- Salt
- Pepper
- 2 tbsp olive oil
- 1 tbsp white balsamic vinegar
- 150 g goat cream cheese
- Lemon juice
- chili powder
- 100 g green olives (pitted)
- 60 g mixed seeds (e.g., pumpkin, sunflower, pine)

Wash, trim and pat dry the zucchini. Slice the central part lengthwise into 8‑12 thin strips about 3 mm thick using a mandoline or slicer. Season with salt and pepper and quickly sear in a nonstick pan with 1 tbsp hot oil until golden brown on both sides. Place on a plate, drizzle with balsamic vinegar, and let cool. Dice the remaining zucchini into small cubes. Peel and finely chop the garlic. Sauté the zucchini cubes and garlic in the remaining oil for 1‑2 minutes. Remove from heat and allow to cool slightly. Mix in the goat cream cheese and season with salt, lemon juice, pepper, and chili. Spoon the mixture onto the center of each zucchini slice and roll up. Secure with toothpicks and arrange 2‑3 rolls per plate.
