Zucchini Rolls

- 200 ml milk
- 500 g flour
- 1 packet dry yeast
- 2 Eggs (size M)
- Salt
- 4 tsp herbs de Provence
- 8 tbsp olive oil
- 2 Zucchini
- Salt
- Pepper
- 200 g sheep cheese

Heat the milk lukewarm. In a bowl mix the flour and dry yeast. Add the eggs, 1 tsp salt, herbs de Provence, milk, and olive oil, then knead with a hand mixer’s dough hooks into a smooth dough. Cover and let rise in a warm place for about 30 minutes.

For the filling grate the zucchini and season with a little salt and pepper. Let it rest for 15-20 minutes. Crumble the sheep cheese. Squeeze out excess moisture from the grated zucchini using kitchen paper.

Briefly knead the dough again. Dust a work surface with flour and roll the dough into a rectangle (about 25x20 cm). Spread the sheep cheese and zucchini over the dough, then roll up along the long sides toward the center and cut into about 20 slices with a sharp knife. Place on a baking sheet lined with parchment paper. Press the rolls slightly flat. Bake in a preheated oven at 200°C (gas: level 3-4, fan: 180°C) for about 15-20 minutes.
