Zucchini Patties with Turkey Breast Rolls

- 3 zucchini
- 250 g sweet potatoes
- 2 onions
- 1 egg
- 1 tbsp chopped parsley
- 75 g flour
- 25 g starch
- Salt
- Pepper (freshly ground)

- 4 tbsp Vegetable oil
- 4 turkey cutlets (about 150 g each)

Preheat the oven to 100 °C with upper and lower heat. Wash, trim, and slice one zucchini into long strips; grate the remaining zucchini finely. Peel, wash, and grate the sweet potatoes similarly. Peel the onions, cut them into fine strips, and mix with the zucchini, sweet potatoes, egg, parsley, flour, and starch. Season with salt, pepper, and nutmeg. Scoop 1–2 tbsp of the mixture onto a spoon, shape into patties, and fry in a hot pan with 2 tbsp oil until golden brown on both sides.

Remove the patties, drain on kitchen paper, and keep warm in the preheated oven. Meanwhile, wash, dry, flatten, and halve the turkey cutlets. Season with salt and pepper, place a half zucchini slice on each, roll up, and secure with a wooden skewer. Brown the skewers in another pan with the remaining oil from all sides. Arrange the zucchini rolls and skewers on a plate. Serve with fresh herb quark.
