Ingredients

  • 4 yellow zucchinis
  • 1 red chili pepper
  • 3 Garlic cloves
  • 2 handfuls parsley
  • 2 tbsp olive oil
  • 1 tbsp lemon oil
  • Salt
  • ground black pepper

Instructions

    Wash the zucchini, trim the ends and slice into about 1 cm thick rounds. Wash the chili pepper, cut lengthwise, remove seeds and white membranes, then slice thinly. Peel the garlic and finely chop. Wash the parsley, shake dry, pluck leaves from stems and chop.

    Heat oil in a large skillet or pot, add garlic, chili, and zucchini; sauté for 3-5 minutes. Season with lemon juice, salt, and pepper, then fold in parsley at the end. Pairs well with grilled meat or fish.
