Zucchini Omelette

With the Zucchini Omelette from Spoonsparrow you can end your after-work healthy and tasty.

Ingredients

  • 10 eggs
  • 50 ml oat milk
  • 2 tbsp freshly chopped basil
  • Salt
  • Pepper
  • 2 zucchinis
  • 250 g Cherry Tomatoes
  • 2 tbsp olive oil

Instructions

    Whisk the eggs with oat milk and basil, seasoning with salt and pepper.

    Wash, clean, and cut the zucchini into pieces; wash and halve the cherry tomatoes. Toss the vegetables lightly, season, and sauté 1/4 of them in a little hot oil for 3–4 minutes.

    Pour 1/4 of the egg mixture over the vegetables, mix gently, and cook for 4–5 minutes until golden brown and set.

    Repeat the process to make all four omelettes and serve immediately.
