Ingredients

  • 600 g small sweet potatoes
  • Salt
  • 1 untreated lemon (juice and fine zest strips)
  • 100 ml sherry vinegar
  • 4 tbsp olive oil
  • 2 garlic cloves (pressed)
  • Salt
  • pepper (ground)
  • fresh oregano leaves

Instructions

    Wash potatoes and cook them in the skin

    Mix all ingredients for the marination, cut the potatoes lengthwise in half and mix with the marinade while still hot. Slice one lemon into thin slices and place on a plate with the potatoes. Decorate with oregano leaf pieces.
