Yellow Lentil Soup with Carrots and Coriander

Ingredients
- 200 g Yellow lentils
- 1 onion
- 1 Garlic clove
- 1 small red chili pepper
- 2 carrots
- 1 piece fresh ginger (ca. 2 cm)
- 2 tbsp olive oil
- 2 tbsp Curry Powder
- 600 g vegetable broth
- 300 ml coconut milk
- Salt
- Pepper (freshly ground)
- Lemon juice
- fresh coriander (for garnish)
Instructions

Rinse the lentils in a sieve.

Peel and finely dice the onion and garlic clove.

Wash, deseed, and slice the chili into thin rings.

Peel and grate the ginger finely.

Peel, trim, and slice the carrots into thin rounds.

Heat the oil and gently sauté the onions, garlic, chili, and ginger.

Sprinkle the curry powder over them, let it brown briefly, then deglaze with broth and coconut milk.

Bring to a boil and simmer for about 5 minutes.

Add the lentils and carrots and simmer for another ~10 minutes; add more broth if needed.

Finish by lightly pureeing the soup, season with salt, pepper, and lemon juice.
