Ingredients
- 2 carrots
- 2 onions
- 1 tsp freshly grated ginger
- 1 tbsp plant oil
- 300 g yellow lentils (peeled and split)
- 1 tsp black cumin seeds
- 1 tsp ground coriander seeds
- 1 tsp ground cumin
- a handful curry leaves
- plant oil for frying
- 1 tsp Lime juice
- Salt
- black pepper (freshly ground)
- roasted coconut flakes (for garnish)
Instructions

Peel and finely dice the carrots and onions. Wash, halve, clean, and finely chop a chili pepper. Sauté together with carrots, onions, and ginger in hot oil. Add lentils (washed and drained), black cumin seeds, coriander seeds, and cumin; stir briefly, then deglaze with about 600 ml water. Bring to a boil, cover, and simmer for about 20 minutes until tender, adding more water if needed.

Fry the curry leaves in plant oil and drain on kitchen paper.

Season the dal with lime juice, salt, and pepper, fold in coriander, and serve garnished with fried curry leaves and coconut flakes.
