Yeast Bunny
A fresh yeast dough recipe featuring fluffy bunny shapes and a delightful sweet flavor from Spoonsparrow.
Ingredients
- 500 g flour
- 42 g yeast
- 80 g sugar
- 180 ml lukewarm milk
- 100 g butter
- 3 egg yolks
- 1 tsp saffron powder
- 1 pinch salt
- 2 egg yolks (for brushing)
- 6 raisins

Sift the flour into a bowl, create a well in the center. Dissolve yeast and sugar in the milk, pour into the well, cover with a bit of flour, let rise for 15 minutes. Add melted butter, egg yolk, saffron, and salt to the flour; mix into a smooth dough, cover and let rest in a warm place for 30 minutes. Knead on a lightly floured surface and beat; cover again and let rise for another 40 minutes.

Combine the dough, divide into three small and three larger portions, and cut out bunny shapes using templates if desired.

Shape front and back legs and ears from each dough piece, attach with beaten egg yolk.

Line baking trays with parchment paper, place the bunnies on them. Press raisins into the dough for eyes. Let rest 10 minutes, brush with egg yolk, bake at 190°C for about 20 minutes.
