Ingredients

  • 400 g flour
  • 0.5 tsp Salt
  • 0.5 cube Yeast
  • 50 ml olive oil
  • 200 g Gorgonzola
  • 1 tsp rosemary, finely chopped
  • 1 tsp oregano, finely chopped
  • 3 tbsp olive oil
  • 40 g grated Parmesan
  • Salt
  • Sea salt
  • rosemary sprigs
  • butter (for the baking tray)
  • flour (for the work surface)

Instructions

    Stir the yeast with 200 ml lukewarm water. Mix the flour with the salt in a bowl. Add the dissolved yeast and olive oil to the flour and knead into a smooth dough using the paddle attachment of an electric hand mixer. Cover and let rise in a warm place for about 45 minutes.

    Cut the Gorgonzola into small pieces and mix with the herbs, 2 tbsp olive oil and Parmesan; lightly season with salt.

    Knead the yeast dough again on a floured surface, divide it in half, and roll each part into thin rectangles.

    Place one dough piece on a greased baking tray, spread the filling over it. Cover with the second dough piece. Brush the edges with water and press gently together. Sprinkle sea salt and rosemary sprigs over the focaccia. Press shallow dents into the surface with a small spoon and drizzle with remaining olive oil. Cover and let rise again for 15 minutes. Then bake in a preheated oven at 200°C (middle rack) for about 20 minutes.
