Ingredients

  • 500 g sausage
  • 1 Carrot
  • 4 medium pickles
  • 4 tbsp wine vinegar
  • 2 tbsp pickle liquid
  • 3 tbsp oil
  • Salt
  • white pepper
  • 1 pinch sugar
  • 1 tbsp chopped chives

Instructions

    Remove the skin from the Lyoner and slice the sausage into thin strips. Peel the carrot and cut it, along with the pickles, into fine ribbons. Combine both with the sausage in a bowl.

    Whisk together wine vinegar, pickle liquid, oil, sugar, salt, and pepper; taste and adjust seasoning. Add this dressing to the remaining ingredients in the bowl, cover, and let rest for at least 1 hour.

    Finally, add chives, taste again, and serve. Pair with fresh bread as desired.
