Wok Noodles with Vegetables

Ingredients

  • 250 g rice noodles
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 200 g Chinese cabbage
  • 2 red chili peppers
  • 1 bunch spring onions
  • 2 Garlic cloves
  • 3 tbsp oil
  • 1 bunch parsley
  • 2 tbsp white wine vinegar
  • 4 tbsp Oyster sauce
  • 2 tsp soy sauce
  • Salt
  • Pepper

Instructions

    Rinse the rice noodles according to package instructions, then pour hot water over them and let them soak. Cut the bell peppers in half, remove seeds, wash, and slice into thin strips. Wash the chili peppers, halve them, remove seeds, finely chop.

    Trim the spring onions, wash, cut off ends, and slice into rounds. Clean the Chinese cabbage, wash, and cut into 1 cm wide strips. Heat a wok, add oil. Peel the garlic, press it in. Add bell peppers and chilies, stir-fry for 2 minutes.

    Add spring onions and Chinese cabbage, stir-fry another 3 minutes. Pour in vinegar, oyster sauce, and soy sauce. Drain the noodles well, mix them in, and fry briefly. Finely chop parsley, fold it in, season with salt and pepper.
