Ingredients

  • 100 g wild rice
  • 1 eggplant
  • 2 bell peppers (1 red & 1 green)
  • 4 tomatoes
  • 500 g zucchini
  • 1 onion
  • 2 Garlic cloves
  • 3 Tbsp plant oil
  • 1 tsp Oregano
  • 2 sprigs thyme
  • 2 sprigs Rosemary
  • 2 tbsp butter
  • 0.5 bunch Parsley
  • Salt
  • Pepper

Instructions

    Bring wild rice with 3 cups water to a boil, season with salt and simmer covered over medium heat for 35 minutes.

    Wash vegetables and pat dry. Peel onion and slice eggplant thinly; peel garlic and finely chop.

    Heat oil in a large pot, sauté eggplant, garlic, and onion. Halve peppers, remove seeds, wash, and roughly cube. Slice zucchini, quarter tomatoes, remove seeds, and roughly cube. Add all to the pot with spices.
