Wild Ragout

Ingredients
- 500 g game meat (fresh or frozen, sliced into very thin strips)
- 2 tbsp butter
- 2 large onions
- 1 tbsp mustard
- 1 tbsp soy sauce
- 3 cups beef broth
- 2 tbsp flour (whisked smooth with a little broth)
- 2 cups sour cream
- 5 slices Gudbrandsdalen cheese
- 200 g mushrooms (diced)
- salt to taste
- black pepper to taste
- 2 tbsp parsley (finely chopped)
Instructions

Sear the meat in butter. Roast onions and mushrooms in a deep braising pan. Add the meat, broth, and whisked flour. Season with soy sauce and mustard, then simmer over low heat until the meat is tender (at least 15 minutes). Finally stir in Gudbrandsdalen cheese and sour cream.

Season with salt and pepper and sprinkle chopped parsley on top. Serve with mashed or boiled potatoes and either Brussels sprouts or broccoli.
