Ingredients
- 80 g hazelnuts
- 80 g wild garlic
- 150 ml olive oil
- 20 g Parmesan
- Lemon juice
- Salt
- Pepper

Roast the hazelnuts in a dry pan until golden brown and fragrant. Remove from the pan, rub off the skins with a kitchen towel, and let them cool.

Wash the wild garlic, shake off excess water, and roughly chop it. Blend the chopped wild garlic with the roasted hazelnuts in a blender, gradually adding olive oil until the pesto reaches a creamy consistency. Grate the Parmesan and fold it into the mixture. Season the pesto with lemon juice, salt, and pepper, then transfer it to a clean jar.
