Wild Garlic Pesto

Pesto made from wild garlic by ➸ Spoonsparrow brings spring to the plate in no time.

Ingredients

  • 50 g Pine nuts
  • 2 handfuls wild garlic (ca. 50 g)
  • 150 ml olive oil
  • Salt
  • black pepper (freshly ground)

Instructions

    Roast the pine nuts without fat in a pan until golden brown. Remove and let cool.

    Wash, trim, dry, and roughly chop the wild garlic. Blend it with the cooled pine nuts, gradually adding olive oil until the pesto reaches a creamy consistency. Season with salt and pepper.

    Transfer to a glass jar, cover with oil, seal, and store in the refrigerator.
