Wild Garlic Pasta Dough
This pasta dough for wild garlic noodles gets a delicious herb note. Try it out!

- 150 g wild garlic
- 300 g spelt flour type 1050
- 2 Eggs
- Salt

Clean, wash, and shake dry the wild garlic, then blanch in boiling water for 2 minutes. Shock with cold water and drain. Squeeze out excess moisture from spinach and finely puree with a hand blender.

Put flour, wild garlic, and eggs into a bowl and mix well with the dough hook of a hand mixer, then knead by hand into a smooth dough. Cover and let rest in the refrigerator for about 30 minutes.

Divide the dough into portions, lightly dust with flour, and run each portion through the pasta machine several times until the dough is about 2 mm thick.

Insert the sheet for tagliatelle into the machine and cut the dough sheets into tagliatelles. Shape into nests and let dry slightly on a kitchen towel.
