Wild Boar Steaks with Juniper Sauce

Ingredients
- 800 g sliced wild boar loin medallions
- Salt
- pepper (ground)
- 2 tbsp clarified butter
- 3 shallots
- 1 Carrot
- 200 ml wild stock (from a jar)
- 200 ml robust red wine
- 1 bay leaf
- 3 allspice berries
- 4 juniper berries
- 4 peppercorns
- 1 tbsp finely chopped rosemary
- 4 tbsp soaked raisins

Soak the raisins in boiling water for 20 minutes, then drain well.

Preheat the oven to 120°C (convection).

Heat a pan with clarified butter. Season the meat with salt and pepper, sear each side for about 2 minutes, then transfer to the oven and roast for about 10 minutes until pink.

Meanwhile, peel and finely dice the shallots and carrot. Sauté them in the same pan. Add wild stock and wine, stir in the spices, and reduce by half over medium heat for about 10 minutes. Add raisins and season with salt and pepper to taste.

Remove the boar steaks from the oven, plate, and drizzle with sauce before serving.
