Wild Boar in Red Wine à la Corsican

Ingredients

  • 800 g wild boar meat (boneless)
  • 2 onions
  • 1 l red wine
  • 2 Bay leaves
  • 1 stalk Parsley
  • 5 sprigs thyme
  • butter for frying
  • 2 Garlic cloves
  • 1 tbsp Tomato Paste
  • 1 tbsp flour

Instructions

    Rinse the meat, pat dry and cut into ~1.5 cm cubes. Peel and halve the onions, slice into strips. Combine meat, onions, wine in a bowl or pot, pour enough wine to cover everything. Add bay leaves, parsley, thyme, cover and refrigerate for about 1 hour.

    Remove the meat from the wine and let it drain well. Strain the wine, reserve it, and set aside the onions with herbs.

    Brown the meat portions in slightly hot butter, then remove from pot. Once all pieces are browned, return everything to the pot, mix in the drained onions and herbs, sauté for 2-3 minutes. Slice garlic into rounds, add with tomato paste, stir. Dust with flour, pour in the reserved wine mixture. Season with salt and pepper, cover and simmer gently for about 1 hour, stirring occasionally and adding water if needed.

    Before serving remove the herbs from the stew and taste to adjust seasoning.
