Ingredients
- 400 g whole wheat spaghetti (Spirelli)
- Salt
- 20 g Parsley (1 bunch)
- 600 g morel mushrooms
- 2 shallots
- 1 Garlic clove
- 30 g Butter
- Pepper
Instructions

Cook pasta according to package instructions in plenty of boiling salted water until al dente, drain and set aside.

Meanwhile wash parsley, shake dry, pluck leaves from stems and finely chop. Clean morels and leave whole or cut smaller depending on size. Peel shallots and garlic and finely mince both. Heat butter in a pan, sauté shallots and garlic, add mushrooms and cook briefly and vigorously.

Season with salt and pepper, stir in chopped parsley. Toss pasta quickly in the mushroom pan and serve in four pre-warmed bowls.
