Whole-Meal Patties

The whole‑meal patties from Spoonsparrow are filling, gluten‑free and perfect as a meal‑prep dish!

Ingredients

  • 350 g buckwheat
  • Salt
  • 50 g parsnip (0.5 parsnip)
  • 1 egg
  • 1 tbsp freshly chopped dill
  • 3 tbsp rice flour
  • Pepper (freshly ground)
  • 2 tbsp olive oil

Instructions

    Add the buckwheat to about 450 ml of boiling salted water, simmer for roughly 5 minutes, then remove from heat and let it soak for about 10 minutes. All the liquid should be absorbed and the buckwheat should be tender.

    Peel, wash, and dice the parsnip finely. Mix the diced parsnip with the egg, dill, and rice flour into the buckwheat until a well‑mouldable dough forms. Season with salt and pepper and shape into small patties.

    Pan‑fry each side in hot oil for 3–4 minutes until golden brown. Drain on paper towels and serve with dill yogurt if desired.
