Ingredients

  • 1 yeast (about 42 g)
  • 1 tbsp honey
  • 500 ml lukewarm buttermilk
  • 200 g wheat flour Type 550
  • 250 g rye groats (type 1800)
  • 250 g wheat groats (type 1700)
  • 1 dry sourdough starter
  • 1 tbsp salt
  • flour for working
  • 50 g mixed flakes (oat, spelt, barley, wheat, rye whole grain flakes)

Instructions

  1. 1.

Dissolve the yeast and honey in the lukewarm buttermilk.

  2. 2.

Add the flour, both groats, sourdough powder and salt to a bowl, pour in the yeast mixture, and knead with a hand mixer (kneading hook) until smooth. Cover and let rise in a warm place for about 1 hour. Then knead vigorously on a floured surface for another 10 minutes and fold in half of the flakes. Shape into a loaf, place on parchment-lined tray, cover with a kitchen towel and let rise again for 1 hour.

  3. 3.

Preheat oven to 200 °C fan. Brush the loaf lightly with water, sprinkle with remaining flakes, and bake in the preheated oven for about 25 minutes. Reduce temperature to 180 °C and continue baking until done, about 45 minutes total.
