Whole Grain Bread

Ingredients
- 1 yeast (about 42 g)
- 1 tbsp honey
- 500 ml lukewarm buttermilk
- 200 g wheat flour Type 550
- 250 g rye groats (type 1800)
- 250 g wheat groats (type 1700)
- 1 dry sourdough starter
- 1 tbsp salt
- flour for working
- 50 g mixed flakes (oat, spelt, barley, wheat, rye whole grain flakes)

Dissolve the yeast and honey in the lukewarm buttermilk.

Add the flour, both groats, sourdough powder and salt to a bowl, pour in the yeast mixture, and knead with a hand mixer (kneading hook) until smooth. Cover and let rise in a warm place for about 1 hour. Then knead vigorously on a floured surface for another 10 minutes and fold in half of the flakes. Shape into a loaf, place on parchment-lined tray, cover with a kitchen towel and let rise again for 1 hour.

Preheat oven to 200 °C fan. Brush the loaf lightly with water, sprinkle with remaining flakes, and bake in the preheated oven for about 25 minutes. Reduce temperature to 180 °C and continue baking until done, about 45 minutes total.
