White Cabbage and Pepper Paprikash Breakfast Vegetable

Ingredients
- 1 large head of white cabbage
- 2 bell peppers (red and green)
- 2 tbsp Rapeseed oil
- 0.5 tsp hot paprika powder
- 1 red pepperette
- 1 clove garlic
- a pinch thyme
- a pinch salt
- freshly ground black pepper
- 250 ml apple juice
- 125 ml sour cream
- 100 ml Vegetable broth
Instructions

Quarter or eighth the cabbage, remove the core and slice into thin strips. Wash, trim, halve, deseed, peel off white skin of peppers, and dice.

Finely chop the pepperette; if it’s very hot, you may omit the seeds. Peel and finely mince garlic, then crush with a pinch of salt.

Sauté peppers and pepperette in hot rapeseed oil, then add paprika powder, salt, and pepper. Stir in cabbage strips, pour in some apple juice, then add crushed garlic and thyme.

Simmer everything for about 20 minutes, adding more apple juice and vegetable broth as needed to keep the greens from falling apart.

Taste again at the end, serve in bowls, and garnish with sour cream.
