White beans with artichokes

Ingredients

  • 2 kg fresh thick beans (in pods)
  • 4 artichokes
  • 3 tbsp Lemon juice
  • 1 tsp thyme leaves
  • 2 Garlic cloves
  • 3 tbsp olive oil
  • 150 ml white wine
  • Salt
  • Pepper (freshly ground)

Instructions

    Remove the beans from their pods. Wash the artichokes, discard the outer leaves generously. Trim the stems to a point and cut off the leaf tips with scissors. Halve the artichokes lengthwise into eighths and drizzle with lemon juice.

    Heat oil in a wide pot and brown the artichokes well, then mix in thyme, crushed garlic and wine. Season with salt and pepper and cover; simmer over low heat for about 10 minutes.

    Add the thick beans to the mixture and cook everything together for another 5 minutes.
