White Bean Stew with Turkey Sausage and Tomatoes

Ingredients

  • 1 large onion
  • 3 cloves garlic
  • 1.5 tbsp olive oil
  • 400 g white beans
  • 2 tbsp Tomato paste
  • 1 l meat broth
  • 1 rosemary sprig
  • Pepper (freshly ground)
  • Salt
  • 200 g cocktail tomatoes
  • 4 turkey sausages (size varies)
  • oil for frying

Instructions

    Soak the beans overnight in water. Drain and let them rest. Peel and finely chop the onion. Peel and finely chop the garlic. Heat 1 tbsp oil in a pot and sauté the onion until translucent. Add the garlic and cook briefly.

    Stir in the tomato paste, then pour in the meat broth and add the beans and rosemary. Bring to a boil, season with salt and pepper, and simmer for about 45-60 minutes until the beans are tender. About 10 minutes before the end of cooking, wash the tomatoes, halve them, and add to the stew.

    While the beans cook, brown the sausages in the remaining oil until golden brown. Cut into bite-sized pieces and add to the pot.
