- 1 kg white asparagus
- Salt
- sugar
- 2 untreated oranges
- 20 ml orange liqueur
- 2 tbsp butter
- black pepper (ground)
- 500 ml vegetable broth
- 250 g instant couscous
- 50 g breadcrumbs
- 4 tbsp olive oil
- 1 tbsp freshly chopped mint
- 1 tbsp freshly chopped parsley
- Lemon juice

Peel the asparagus and place it in boiling water with 1 tsp salt and 1 tsp sugar; let it cook for about 25 minutes.

Meanwhile, bring the broth to a boil in a pot. Stir in the couscous, remove from heat, cover, and let it sit for 5-10 minutes. In hot oil, toast the breadcrumbs for 3-4 minutes until golden brown. Add the herbs, stir, and fold everything into the couscous. Season with salt and lemon juice.

For the sauce, zest both oranges and squeeze their juice. Caramelize 1 tbsp sugar in a pan. Deglaze with orange juice and liqueur, then add the zest. Let it reduce slightly, whisk in cold butter, and season with salt and pepper. Toss the drained asparagus and serve on plates with the couscous.
