Ingredients

  • 1 kg white asparagus
  • Salt
  • 20 g Parsley (1 bunch)
  • 2 tbsp white wine vinegar
  • 2 tbsp lemon juice
  • 4 tbsp olive oil
  • Pepper

Instructions

    Peel the asparagus, cut off the lower ends and slice the stalks into thin rounds. Boil the asparagus in salted water for 5 minutes.

    Meanwhile, wash, dry, and chop the parsley for the dressing. Whisk together vinegar, lemon juice, 2–3 tbsp of asparagus cooking water, oil, salt, pepper, and parsley.

    Shock the asparagus with cold water, drain and let it drip. Toss with the dressing and serve lukewarm.
