Ingredients

  • 250 g almond kernels
  • 1 tsp Rapeseed oil
  • 200 g sugar
  • 0.5 tsp cinnamon
  • 1 tbsp wasabi paste
  • 250 g unsalted peanut kernels
  • vegetable oil (for the tray)

Instructions

    Preheat the oven to 150°C fan.

    Beat the egg whites with salt until semi-firm, gradually add wasabi powder and starch, then stir in the wasabi paste. Spread the nuts on a lightly oiled baking sheet using a fork, bake for about 45 minutes until crisp, remove and cool.

    Roast the almonds in hot oil while stirring. Sprinkle with cinnamon and sugar, caramelize, and place on a thinly oiled aluminum foil to cool. Separate the almonds if they stick together.
