Warm Pasta Cucumber Salad
The hearty warm pasta cucumber salad features a lush mix of vitamins and minerals and can be prepared even by beginners.
Ingredients
- 200 g red bell peppers (1 red bell pepper)
- 160 g tomatoes (2 tomatoes)
- 400 g small salad cucumber (or 1 piece cucumber; 1 small salad cucumber)
- Salt
- 1 Red Onion
- 6 stalks dill
- 3 tbsp white balsamic vinegar
- Pepper
- a pinch of sugar
- 5 tbsp olive oil
- 350 g short pasta (e.g., penne)
- 12 shrimp (prepped, head and shell removed)
Instructions

Halve the bell pepper, remove seeds, wash, and finely dice.

Wash tomatoes, cut off stem ends in a wedge shape, and finely dice the flesh as well.

Thoroughly wash cucumber, dry, split lengthwise. Use a teaspoon to remove seeds and slice cucumber at an angle into about 1 cm thick slices.

Bring plenty of salted water to boil for pasta. Peel onion, halve lengthwise, cut into fine strips. Wash dill, shake dry, trim tips, and roughly chop.

Whisk white balsamic vinegar with salt, pepper, sugar, and 3 tbsp olive oil in a large bowl. Mix in bell pepper, tomatoes, cucumber, and onion.

Cook pasta according to package instructions in plenty of boiling salted water until al dente.

Meanwhile rinse shrimp cold and pat dry. Heat remaining oil in a large non-stick pan over high heat; cook shrimp while turning for 3-4 minutes.

Drain pasta, reserving 100 ml pasta cooking water in a bowl. Combine pasta and cooking water with the salad. Fold in dill, season with salt and pepper. Plate with shrimp on top and serve.
