Ingredients
- 2 onions
- 200 g walnut kernels
- 4 tbsp butter
- 3 tbsp Flour
- 750 ml vegetable broth
- 150 ml whipping cream
- Salt
- Pepper (freshly ground)
- Lemon juice
- walnut halves (for garnish)
Instructions

Peel and finely dice the onion. Chop the walnuts into small pieces. Melt the butter in a pot and sauté the onions until translucent. Dust with flour and stir to make a light roux.

Add the walnuts and cook briefly, then pour in the broth and simmer gently for about 15 minutes. Add the cream and blend the soup finely.

If needed, add more broth or reduce slightly. Season with salt, pepper, and lemon juice. Whisk again until frothy and serve in bowls. Garnish with walnut halves.
